Food For Fuel

I have become increasingly interested in the food that fuels me. Might be the high blood pressure that the doc says is “bad” or it might be the excellent experience I had before an adventure race with oatmeal (used to detest oatmeal). Dunno. Regardless, the effect of food on my body has become interesting to me. (get your killer 53MPB sticker here or click the pic)

I have two entrants for you in the food-as-fuel category: baked oatmeal and Fatty’s scrambled egg burrito.

Fatty’s burrito is super easy to make: crack an egg or two into a cereal bowl, add a bit of milk and salt/pepper. Whip with a fork. Put in the microwave(!) for about a minute per egg (I usually go few seconds longer, but just go until the watery stuff is gone). Drop that hot egg onto a tortilla and throw some cheese in there. Put the whole business back in the microwave for another 10 secs or so. Then wrap it up and eat it. Maybe throw some hot sauce on there, if that’s how you roll. Super fast, super tasty food! In fact, I think I’m going to make one now…

Baked oatmeal takes a bit more preparation, but it’s totally worth it. Especially if you’re facing a cold morning and need good fuel in your belly to keep you pedaling. Here’s how we (okay, it’s all Amy…I just eat it) do it at our house.

  • 3 cups oats
  • 1½ cups of milk
  • ½ cup of vegetable oil
  • 4 eggs
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup wheat germ
  • ½ cup ground flax seed
  • ½ cup ground pumpkin seeds
  • ½ cup sugar
  • little bit of cinnamon if you like it
  • some dried fruit–I dig raisins, but maybe you need prunes

Just mix all that stuff up, put it in a casserole dish and bake it for 30 minutes @ 350°. The boys and I like to eat it with a little bit of brown sugar sprinkled on top and a splash or two of milk or half and half. Two bowls of that for breakfast and I don’t need lunch. Seriously.

    Yum-O. (Rachel Ray turns me on ok) The Fatty’s Burrito is a winner for sure. It’s basically the McD’s breakfast burrito but better for you and it doesn’t cost as much.

    Scrambled eggs in the microwave is the only way to go. I don’t know why anyone would ever make them another way.

    Only one dish. You can eat them in the same bowl you cook them in. Its genious.

    There’s only 1 reason I’ve never had scrambled eggs this way before…I didn’t know it was possible! I made that burrito yesterday, and, while I wouldn’t say I’m a Rachel Ray fan (not a judgment on you, I’m just saying…), it was “yum-o.” And it only took a couple minutes.

    Oh man I had some baked oatmeal at a restaurant once. Never heard of it beforehand but it was sooo good!

    Learned the microwave scrambled eggs trick back in college. If you really want to be naughty crumble in a frozen sausage or throw some bacon bits in before you nuke it.
